Pumpkin Pie with GingerBread Crust

Pumpkin Pie with GingerBread Crust
After doing a lot of baking during the holidays, today is the first time I'll be doing any kind of baking and broiling. For our lunch or for our dinner I broiled some boneless, skinless teriyaki chicken with some steamed vegetables on the side such as zucchini,broccoli, carrots and cauliflower. And since the oven is already heated decided to bake some dessert. And for dessert, I baked some Pumpkin Pie Square with GingerBread Crust. My unico totally loved it. Its flaky, moist, not too sweet and it is simply scrumptious. Although I've prepared some whipped cream it is not needed for it is delicious as it is.


Ingreadients and Procedure:

For the Crust:
Ginger bread cookies, ginger snaps and melted butter .
Crumble or grind some ginger bread cookies and ginger snaps. Put in a bowl and add some butter till moist then add to the bottom of square or round baking pan. Distribute and press it down evenly and then baked it for 5- 10 mins.

Filling:

1 can of puree pumpkin
1 can evaporated milk
2 eggs
ground cinnamon, ground ginger
sugar according to your taste or preference
salt

Mix all ingredients till smooth add to the crust, while crust is still warm  and baked at 350 degrees for 30 mins.  Serve with whipped cream if preferred but us we just ate it as is and it is simply delicious.

Minatamis na Saging

My husband have been craving for Minatamis na saging dessert so as his doting wife I made some today.  I was on bed rest for the last 2 weeks that finally I was able to drive around and buy some groceries on my own yesterday! It feels so good to be back and do to my day to day activities. Below is the picture of freshly cooked Minatamis na Saging.

Minatamis na Saging Saba


Ingredients:

Saging Saba cut diagonally

Brown sugar

Water

Vanilla

Langka or Jackfruit optional

Procedure:
The measurement for water and sugar is one to one. So you'll need 2 cups of brown sugar then 2 cups of water if cooking 15 to 20 pieces of banana but still you could add more according to ur taste. Put water and sugar to a pot and bring to boil . Then add a few drops of vanilla and your bananas.  Let it simmer in medium heat till it's soft and the sauce have a thicker texture.. You could serve it as is or you could add some evaporated milk and some shaved ice .. Enjoy

Suman or filipino rice cake 


It's been awhile since i've posted something here in my blog...but to start the new year..heres something special...Homemade "suman" or rice cake . But first would like to thank you auntie Mely, auntie Ligaya, uncle Oscar and mom for helping Tatay to make it. Lastly to my unico thank you for learning quickly and perfectly how to wrap a suman. He really enjoyed helping out.. He got to experience the old family tradition ..Making suman for the holidays..we used to do in the Philippines...and it's been years since we last made some and so we are blessed that my son got to do it with his lolos and lolas..so thank you Tatay for insisting of making it and bec of that my son got to experience the spirit of making suman which is Family bonding from wrapping, tying the suman to laughing bec of stories, and jokes.. Making suman maybe hard or tedious but when you make it with family everything became easy and fun.. Again thanks for the experience..lets do it again but lets plan it early..

To make you need sweet rice,coconut milk, salt to taste. Mixed all ingredients and wrap in banana leaves or aluminum foil. Boil till done.  Enjoy making it with your family...

Easy Cassava Cake



Homemade Cassava Cake was prepared on "ourmeza" or table for dessert on Christmas Day.



I've made some Cassava Cake for dessert last Christmas 2007. Made some extra as well for our Christmas Gift give away.


If you are going to buy Cassava Cake for your family to consume plus to give away , buying it from the store would be a bit expensive. So making it is more reasonable if you are going to give some away. It is so easy to make believe me . You'll have enough for your family to indulge with plus enjoy it for a few more days and still give some away as your presents or gifts. For a small square of the cassava cake in the store, the price you pay for it is sometimes 3x more than actual price or even more to make it. Hmmmm well it must be the labor of making it thats why it is expensive. If you can afford and you find cassava cake making a hard thing to do, hey to each its own.
Anyway, for me making cassava cake is so easy. So everytime we have some cravings for it I make some, enough for us to enjoy for a few days. And since I am making it for us for Christmas, I've decided to make extra to give away as our Christmas gift and it didnt even put a dent in our budget. Being in a tight budget, homemade gifts are always a life saver. Simply wrap it in festive clear plastic, with a bow and holy berries voila a very goodlooking gift.

To make it ingredients are

Grated cassava 3- 4 bags ( you'll end up making 4 of the cake square baking pan or depending how small or big your pan is, as long as you distribute it evenly)

1 to 2 bottle of macapuno
(we simply love macapuno in our cassava cake)

2 cans of condense milk ( depends how sweet you want it to be)

1 cup of white sugar

2 cans of coconut milk

grated cheddar cheese
Procedure:


Mix all ingredients except the grated cheddar cheese and 1 can of condense milk.
Preheat oven to 325 to 350 Fahrenheit

Pour mixture evenly to your four aluminum square or round cake pan. ( depends how small or how big your pan is. just distritube evenly)

(note: try putting your pan on a sturdy cooking sheet like the cookie sheet to make it easy to put inside the oven and to pull out from the oven plus knowing that your cassava mixture wont spill into your oven while it is baking.)

bake for 45 min.

Remove from the oven and evenly spread the 1 can of condense milk and topped it with grated chedder cheese to your cassava cake.

Put back in the oven for other 20 to 30 min or until brown. So easy to do.
Serve cold. Enjoy!

Cinnamon Streusel Muffin



Cinnamon Streusel Muffin on "ourmeza" fresh, hot and moist straight from our oven.







My son is in his holiday break from school. So we have been trying to keep him busy. My husband and I allow him to watch television or play his video games for few minutes a day only. We prefer him riding his bike, playing his car or playing soccer with his dad outside. And some other times he loves helping me out with the house chores even without being asked.


I didnt plan to do anymore baking since we've done a bunch day before christmas but when my son went to our pantry to get his snacks, he saw that we still have some of the muffin mix and requested for us to make it. And as his doting mother we did. Well like I said from few of my previous post, he likes helping me because he likes tasting the batter and the icing for the muffin or cookies.


This muffin is so easy to make because it would be semi-homemade, muffin-in-box..lol. We've had it before and my husband and son both like it. It is one way of putting your oven in a good use lol. And baking this muffin will fill your home with warmth and the smell of cinnamon. So who would not agree to making it.


What is needed?


Box of Betty Crocker, Cinnamon Streusel (cinnabon)

milk

vegetable oil

eggs.
(12 muffin baking tray, paper baking cups)


Procedure: Simply follow intructions from the box and in just 20 minutes or so you would have a a dozen of hot, moist and fresh cinnamon streusel muffin. And not to forget it will fill your house with the smell of cinnamon.


Easy to do or easy to make. Making it with your kids is a great for passing time during school break. And you are not just passing time but building memories that could last after a lifetime.

Homemade Christmas Cookies

My son loves helping me out with any kind of house chores even without asking him. He would volunteer to help with much "gusto" especially with the baking . But I think he loves helping out in baking because he loves the mixing part, tasting of the batter and the art of decorating the cupcakes or cookies. Nevertheless I love spending these quality and memorable times with him.

As I have mention in my previous post we have been house bound because we were all sick.
But before we all got sick, my son and I have already planned ahead of time to make some christmas cookies for his classmates and teachers to give away for Christmas. We have bought all the ingredients for the sugar and ginger bread cookies, decorations and gift boxes but sadly it didnt happened because we were unable to make it in time for his Christmas Party because he was sick.
Then few days before Christmas, thank God we all are back on our feet. And so now that he's better he was constantly reminding me to make it still so we could give it away this time to our families and friends instead. Told him to rest few more days because we dont want him to have another relapse and that we will do it before Christmas.
And so finally we were able to make some a day before Christmas. It took me almost all day to bake and to decorate this Christmas cookies, oh forgot I was making some Cassava cake as well so it took almost all day. I'll post the cassava cake recipe next time. My son helped as well but not as much as he wanted because he's still in recuperating stage.

Now Back to our Christmas Cookies Giveaway, my son and I made sugar cookies decorated with Christmas colors ofcourse, the green and the red colors. Oh and the shapes of our cookies; candy cane, snowman, bells, stars, leaf/leaves, trees, stockings and so on. Decorating these bite size or small cookies were more tedious than decorating the regular size cookies. But I could tell my son had a great time in doing it with me so that is more important.
Anyway here are the pictures of our Homemade Christmas Cookies. Our first batch of cookies were burnt. I forgot to turn on the timer plus it is bite size or small size cookies so it cooked faster than usual.

I then later on wrapped it in xmass green clear wrapper with a red bow and holy berries together with some cassava cake as well. Sadly, I forgot to take picturessssss....for the total finished product. Oh well theres still next year..lol.

Fillet of Tilapia,Pancetta Fried Rice and Bread Pudding




When I went to our local grocery store to buy some or few items for our "noche buena", I happened to see the seafood section being stocked. And the prices for the fillet of salmon and fillet of tilapia are fairly reasonable so I bought some salmon and some tilapia. Prices were down perhaps because everyone are buying turkey,ham and beef. But I am thinking far ahead not just for the "noche buena" or christmas day food but our food before the "media noche" and New Year's Day.

And since its a given that there would be some of left over from noche buena, I would not want to feed my family the whole week with the left over. And so in between decided to bring back the fish factor in our diet. And since there are some bread that are about to go stale so why not make it as bread pudding and still enjoy it in few days ahead. And with the Pancetta that I wasnt able to use, I was going to make some quiche with it but from baking cookies and cassava cake, making quiche would be great for another day. I'll post the christmas cookies that my son and I made, and the cassava cake that I made are just simply delicious...next time.

Anyway so I've decided to use pancetta in a fried rice instead. And so last nite for our dinner we had on "ourmeza" some Fillet of Tilpia dusted with tempura, Pancetta Fried Rice, surprise favorite of my husband "lumpiang gulay" (posted already) and Some Bread Pudding for dessert.


Fillet of Tilapia Dusted with Tempura


Fillet of Tilapia


Lemon

salt

pepper

tempura

olive oil


Procedure: Salt and Pepper both sides of the fillet of tilapia and just before frying it dust it with the tempura powder. Fry till golden brown and lemon wedges on the side to squeeze if desired before eating.

Pancetta Fried Rice

Crumbled Cooked Rice

Garlic


Onion

Olive oil

Carrots

Green Peas

green onions

eggs cooked scrambbled

Pancetta browned and crumbled

Salt and pepper to taste if needed (optional)

Procedure:

Saute garlice and onion. Add crumbled cooked rice,stir fry for few minutes then add the cooked scrambbled eggs, pancetta browned and crumbled. Lastly add your carrots,green peas and green onions. If needed add salt and pepper.


Bread Pudding

I have been making this bread pudding since I was in my teens. It is my family's favorite. You could add banana or nuts if you want.

Bread crumbbled

Cinnamon (optional) but I simply love cinnamon in my bread pudding

Eggs


Sugar

Butter

Raisins

(banana,nuts and etc can be added if preferred)

condensed milk

Procedure: Mixed all ingredients and baked for 45 min or till brown or when you stick a toothpick in the center and when pulled out it is clean, then ur pudding is cooked.

Three simple recipe that would make your family feel special. The Bread Pudding can be served as dessert during simple get together as well.

Bibingka


Bibingka is one of the filipino delicacies that my family enjoys and our all time favorite.

We had it recently and it was warm,moist,tasty and just perfect with some either hot cocoa, hazelnut flavored coffee or some green tea.

Eating it made us remember the different delicacies consumed after the "simbang gabi" by the church goers.

Well first "simbang gabi" is one of the famous filipino tradition during christmas season. It starts on December 16th and ends during the midnightmass, night before christmas. We call the midnightmass "Misa de Gallo". I remember as a child we, meaning my cousins,friends and I believed that completing the nine days "simbang gabi" mass means all of our whishes will come true. We then, would all try very hard to complete the 9 days mass. (Ofcourse, later on we've learned the deeper meaning of "simbang gabi")
We would all help each other in completing it and we would have an understanding that we need to take turns to wake up each other. And our meeting place would be either at our house or at a friend's house.
So heres how we did it, a friend/cousin or friends/cousins of mine will start knocking on our door if its her or their turn to wake up everyone or vice versa if it is our turn ,we'll go knocking on our friends/cousins door so we could all go together to mass. And most of the time we were at the church early but then again there were times that we were a bit late. Why?

Well, as we all know getting up during Christmass season was hard to do because of the cold weather. Cold weather only means it is the best time to curl up and stay in a warm bed. And back then, I would be covered with my soft cartoon printed blanket and would stay like that until the shy sun starts to rise again. But then my alarm clock would start blaring so loudly that I would need to drag myself to get up and to turn it off. And it only means its time to get ready for the "simbang gabi".

And before getting ready, I would always have an inkling to go back to my warm bed and why it have to look so enticing to do so....but but but but ....lol I know that in just few minutes some of my friends or cousins would be knocking on our door, so the temptation of giving in was not an option. So even half-awake I would try very hard to get ready.

Thank God, by then my mother would be up and some hot drink was ready for us to drink before we leave for mass. And on the dot, most of the time here comes my friends and cousins, loudly laughing or talking outside our
door. I would then join them and we would all go to mass. Walking side by side wearing our warm sweaters or jackets, we would be still shivering to the cold wind. But when laughters and stories were shared on our way to church, the cold wind was forgotten. And at the church even it was early dawn, it is filled with church goers.
Lots of people were praying which made the church a very warm place to be. When I said, a very warm place, its not just about feeling warm but the warmth and the humility that you would feel during that moment. And the songs of praises and songs of the season would fill the air that makes everything seems so magical and so spiritual. I, then would have this overwhelming feelings deep in my heart that I actually cannot explain. Or lets just say, it truly touched my heart. And maybe that is why "simbang gabi" is the most famous and most loved traditon of the filipinos.

And not just that, after the mass, outsite we would see different vendors selling different delicacies such us.."puto bumbong", bibingka, puto or kutsinta, hot chocolate, hot tea, hot sopas or hot pandesal. And most of the time we would have some bibingka with freshly grated coconut or some times we'll have sopas and hot pandesal.

Well those were the good 'ol days when we were back home (home meaning Philippines). And now that we are here in the west, our new adopted home we try our very best to continue on the traditions we grew up with. There may not be "simbang gabi" in every church here but we always make sure that we go to the midnightmass or "misa de gallo" to welcome in remembrance the birth of Jesus Christ.

Well,this is getting so long its just remembering or reminiscing the good old days make me wish that now as a young mother that my son ( or children, with God's Blessing) will experience same tradition. And that is why we make sure that "misa de gallo", the noche buena, media noche, constant family get together and celebrations are important traditions that he will never forget and he then can pass on to his children.

Few more things though..lol..back then, I remember that at one point one of my cousin had a place where she sells bibingka, where she cooked bibingka per order. So it was warm,moist and very tasty. It was topped with butter, itlog na maalat or cheese and freshly grated cheese.

And when we moved here in the west, my Dad ( he loves bibingka) brought back here after his vacation from the Philippines some of the cooking equipment needed for it together with the clay plate. The ingredients to make it and the banana leaves and the grated coconut can be bought in the asian grocery store. We used to make them every time my Dad would have some cravings for it. My aunties, 2-3 of them will then start making it and all of our family will happily enjoy it together. This was when I was still single.

And now married and all, just recently we had some "bibingka" And since all the equipment that were used before were all gone and thrown away,we've learned a different way to make it...oven and foil plate. The taste remind us of the good 'ol days but nothing could compare to if you'll make it and cook it the good 'ol ways I guess... lol.


Ingredients:

sugar
coconut milk
itlong na pula
sweet rice flour
salt
baking powder
Sliced of Cheese cheddar/ kesong puti (goat cheese)
butter
fresh grated coconut
banana leaves to line your foil plate

Mixed all ingredients. Oven can be used. Baked for 30 minutes or till brown on top in 325 degree oven. When almost done, add the cheese or itlog na pula, put back. And when done spread some butter, sugar and top it with grated coconut.

Decorated Cookies

Our unico hijo loves helping me out whether it is house chores or cooking or baking. When he sees me busy tidying up the place he'll start dusting the table even though I didnt ask him. When he sees me loading clothes in the washing machine he'll come running to help me out. And ofcourse he'll want to pour the laundry soap, softener and push the button to start it. But what he loves the most in helping me out is making the steamed white cake or "puto" and baking cookies or cupcakes. He likes stirring,mixing and tasting the batter. Asked him not to eat the batter but when I turned my back I know that he did it anyway. I could tell that he did it by the left over batter on the corner of his mouth. It is cute and funny how he was trying to hide it and acting so innocent.
Anyway just the other day we made some cookies for him to take to his school. We made some oatmeal,sugar cookies in different shapes. We made cookies shaped like trees, hearts, flowers, stars and clovers. We then decorated it with vanilla and strawberry frosting and sprinkles chocolates and nonpareil, this is his most favorite part... decorating and frosting the cookies. Why? Well he'll taste the frostings and sprinkles first and I'll always ask him, "Why are you tasting it first, his response always were " I'm checking first if its good ". And after tasting it, he'll always say: " yes it would work" And this would happened all the time...hahaahha... another glory moments that passed by but as always, it stayed as treasures of my heart.

So spending lots of time whether cleaning together, cooking and baking together, doing school project together, playing and so on... spending time with our kids specially at their young age will surely give us lots of fond memories to keep us smiling and laughing during our old days.
Memories such as this are true treasures of the heart....so lets keep building them.

Puto (Steamed White Cake)



Puto or steamed white cake is my son's all time favorite. He made this batch of puto. He mixed all the ingredient,whisked it, poured it in the muffin pans that I've put butter on. And he arranged the puto on a plate as you could see in the picture. The only thing I did were, supervised him while mixing all the ingredients and I'm the one who put the mixture in the muffin pan in the steaming hot steamer. And ofcourse I took it out also from the steamer. He wont let me help him at all with the mixing and the whisking. He said "Mommy, I'm big already, I'll do it and mom I need more milk!" hahaha...hmm and he is only 4 years old. I guess he is the chef and I am his assistant. Oh well ever since he was just turning two years old, making puto is our bonding time together. Even before he loves mixing,stirring,whisking and eating the puto batter. I keep telling him wait till its cooked. He'll say yes but when I turned my back just for a few seconds guess what he did? Yup and I could still see the evidence a drip of it on his chin. I guess it shows only how much he loves puto.
And so today after watching his favorite show Curious George and Clifford the Red Big Dog, asked him to turn off the tv and guess what he said "one more show mom Dragon Tales". So I asked him which one do you want to do, make your puto with mommy or watch Dragon tales? He replied with much gusto "make puto". And he immediately turned off the tv.

So we've gathered all the ingredients from our pantry, flour,water or milk, sugar,butter,baking power. He mixed all ingredients,poured in the muffin pan and I put it in the steamer for 30 mins. To check if its done, surface whould be shiny and it bounces back when you pressed it. When done, brush surface with butter. And voila...home made puto prepared on "our meza" made by a four year old.
All in all, he ate three in one sitting. Spreading butter while the puto is warm. And after 2 hours, he asked me again if he could have more. So the day is not over yet, he ate 4 already. We have made 12 and I think he'll finish most of it. So better save some for his dad.

Buko Pandan




Now these days, I find that I am not very fond of any kind of sweets. For some reason after getting married,having a baby and so on, I rarely eat sweets. But before I love eating chocolates. I love the dark dove chocolates, hmm the one with the message..hahaha...glory days really passed as by so quickly...woooh...just had a flash back of the good ol' days...shhh secret..hahaha.


Anyway....as I've said lately I dont like eating sweets....but with an exception though when it comes to buko pandan. Everytime we go to a filipino resto I will always look at the dessert menu to see if they have Buko Pandan. Well sadly the only place that serve it, is Max's. And dont like going to Max's anymore. Why? because everytime we go there, something doesnt taste right . The sizzling Bangus is not sizzling and with the kare-kare I could tell that they've used a kare kare powder mixture because it havent totally dissolve...oh well. I've been craving for buko pandan and so I've asked my cousin if she knows how to make it and she does and I've found a buko pandan recipe too and so I've incorporated the two and the outcome hmm think made it too sweet but still need to chill it overnight and we'll see it how it is....

Well with buko pandan, need nestle cream,condensed milk, eggyolk optional,green jello unflavored, pandan, macapuno and green nata de coco... simmer the nestle cream,condensed milk and eggyolk need to be careful not to burn it...let it simmer till it is thick and stirring constantly. with the green gelatin cooked and cubed. mix all ingredients and viola....buko pandan.... A dessert that can be served to your guest and prepared on your "meza".

Almond Flavor Agar Dessert with Fruit Cocktail



Almond Flavor Agar (Gelatin) Dessert with fruit cocktail is an example of easy to make dessert.

As I have mention in my earlier post eversince the hot weather started we are always craving for light meal only especial during dinner time and some refresing or cold dessert.
And so for our dinner tonight, on " our meza" we had some Red Snapper season with salt and pepper and then fried in EVOO. We had some cucumber salad also, cucumber and tomatoes salt and pepper to taste.
Then for dessert, I made this Almond flavor Agar (gelatin) Dessert with fruit cocktail. Actually I did'nt plan to make this today, but as I was arranging my pantry (its been in disarray since I've started working) and I saw that I have two bags of the Agar almond flavor, can of the fruitcocktail so why not make it as our dessert tonite since it is so easy to make. And so while I was cooking the Red Snapper fish, I went ahead and boiled the Agar in two cups of water, I've added some sugar for extra sweetness. To mold or to shape my gelatin I've used my bundt cake mold . And before my fish was done cooking, guess what the agar mixture is done but before pouring it into my mold, I've arranged the 1 can of fruit cocktail at the bottom of the mold already so that when I turn it over all the fruits will be on top and will serve as decoration also. I let it stand for few minutes in the fridge so I could serve it cold. Picture above is the finish product. It was our dessert tonite and we have some left over to enjoy for tomorrow. Easy, simple, full of flavor, lite and refreshing especially on a hot day, like today.

"Turon" (Lumpia or spring roll wrapper filled with bananas)

These are "burong saging" . I use it to make "turon" or spring roll wrapper filled with bananas and jack fruits.


"Turon" is a lumpia wrapper or egg roll wrapper or spring roll wrapper filled with bananas. You could use regular banana, plantain banana but "burong saging" are still the best. You could buy it here in the west mostly in asian store but to my surprise they have it sometimes here in our local grocery store. So when they do, I make sure that I buy it because my husband loves "turon" and bananaq. Since I have to go to the asian grocery store to buy some fresh fish, meat and other produce I went ahead and bought some. I found some good looking "burong" banana so I bought it and I made some "turon" today. You could actually make a lot, freeze them and prepare them when ever you have company or when ever you are craving for something sweet and crunchy.


What you need are, lumpia or spring roll wrapper,banana, optional jack fruit and sugar.

Banana cut according to your desire size. I cut it into four to make it smaller and easier to bite. ( bit bigger than lumpiang shanghai size)
Put 2 slices of banana in the "lumpia" wrapper
Add your jack fruit or sugar optional ( sugar is not needed, unless you want it extra sweet) .

Deep fry until golden brown. I put it in myprepared platter with some paper towel.
"Turon" and ice tea or lemonade will be on "our meza" on this very hot day. Yup just few days back it was cold now it is scorching hot. So this is just perfect, warm,crunchy,sweet turon and ice cold ice tea or lemonade will be just fine.

Fruit top Cheesecake

My husband loves dessert. Among his favorites are cheesecake, fruitsalad, rice cake or bibingka, turon or banana fritter and etc. Well, last sunday when we were reading the newspaper (my husband and I), my son ofcourse were going through it too. He loves looking at the pictures and loves spelling out the words that he sees in the ads magazines. Looking back, (please bare with me with this looking back thing) few weeks ago we surprised his Dad with a Chocolate cake. My son helped me make it. He did all the mixing and the tasting while mixing and the nonstop hmmm this is so good mom. And when we were done putting the chocolate icing ofcourse, he wanted to make some more. I asked him why he wants to make more cakes? His answer was, I want to bring it to school. I told him next time again because we dont have enough ingredients. So back to last weekend, while looking through the newspaper, he saw a picture of a cheesecake with fruits on top of it (phillycheese ads). He said Mommy, want to make this please mom. I said yes next weekend. And this is that weekend, so while my husband took him to have his hair cut at Supercuts yesterday, I went ahead and bought some groceries and got the ingredients for our fruit top cheesecake. Top picture is the finished product.

Ingredients:

1 envelope of Non flavored gelatin
1/2 cup sugar
1 cup water
1 9 inch graham cracker crust ( you could buy the ready one from the grocery)
2 packages of cream sheese, softened.
fruits ( any seasonal fruits) I happened to see some great looking strawberries and some kiwi so I bought it. No pics of the kiwi, I used and we ate them already. These were the left over of the strawberries that I bought. There were some huge ones so those were the first ones that we ate.

Procedure:


Dissolve your gelatin in the water together with the sugar and let it boil while mixing.
With a mixer beat the cream cheese and slowly add the gelatin ( you could add crumbles of oreos cookies too). when done pour it to the prepared crust. Put it in the fridge until firm. Garnish it with berries and mint. Mine I garnish it with kiwi, fresh looking strawberries that I just bought and oh aside from that these strawberies looks so good it is so sweet too. So this fruit top cheesecake is actually very refreshing with all the fruits on the top.
