Chicken Katsu



 Nothing has changed, as always when my unico or my husband will request for me to cook what they are craving for and  given that we have the ingredients or could be easily bought from close by grocery store, their wish is my command.

This time our unico requested for me to cook or make Chicken Katsu, it is one of his all time favorite and it so happened I just bought some chicken breast and that I also  have all the rest of the ingredients then it shall be done.

Also , right there and then I knew that we will have sliced  mini cucumber drizzled with sesame oil, freshly grind black pepper and salt for our side and of course some steamed rice.

Potstickers, Gyoza or Dumplings



I have made some Dumplings to make it as Potstickers....Whats the difference between Dumplings and Potstickers you may ask??? Arent they the same? Well lets see...

Well first with Chinese it is called Dumplings and with Japanese it is called Gyoza. Dumplings and Gyozas are boiled most of the time instead of panfried and steamed. Dont get me wrong Gyozas can be steamed, panfried and so on...So when it is panfried and steamed to have a somewhat crunchy crust at the bottom it is called Potstickers. And Potstickers, when you bite into it it is moist, soft and crunchy at the same time that makes it very appetizing.

And since we love having it every time we were in a Chinese or Japanese restaurant and sometimes cant get enough of it... decided to look for easy to make Dumplings recipe. Luckily found one that I could bravely say, easy to make.

Above picture are and were (gone in an instant) the Potstikers with vinegar,soysauce and pepper flakes for dippings that I have made and prepared on "ourmeza" for our snacks. And I still have some extras and I've stored them in our freezer. And whenever I am ready to cook them when ever we have some craving for it we could easily have it.

Ingredients:

chopped cabbage (boiled)

chopped green onion

ground pork or chicken or beef or shrimp

sesame oil


sugar

soysauce

minced garlic

minced fresh ginger

gyoza wrappers

extra virgin olive oil...

Procedure:

Mix all of the ingredients. Fill the gyoza wrapper with the mixture. Sealed edges of the wrapper by wetting or dumping it with water. Fold and sealed being that the mixture would be in the center. Add the olive oil in a frying pan. Put gyoza or dumplings in the pan and fry until the bottoms become golden brown. Add water just enough to steam the dumplings in the pan about 1/4 to 1/2 cup of water depends how much you have dumplings in your pan. Cover the pan and steam the gyoza on low heat until the water is gone.

Yakitori

Yakitori was prepared on "ourmeza" together with some fresh miki pancit, stir fried vegetables, steamed rice and some ice cold ice tea.



First time I had Yakitori was when some friends, co- workers of mine and I went to the japanese restaurant in Milpitas CA.

I was told then by one of my co-worker that Yakitori means grilled chicken. And it is skewered in BBQ sticks or speared wooden sticks. The marinade or the sauce glaze used in grilling were or are spiked with some sake sometimes. I really like it then and it seems so easy to make if grilling is the form or way of cooking. Since then been wanting to cook it but never really got into doing it.

And just recently I was going through some of my cooking books to find something new to cook, found quite a few that I could make in the days ahead but the Yakitori caught my eye. And since we have been grilling most of our food lately, Yakitori would be just perfect for us. Result? Yummylicious, lol.





Yakitori Ingredients:



Chicken boneless and skinless
cut into cubes or bite size.

Sugar

Honey ( I've used Maple syrup since it
can be substituted for the honey)

Soya Sauce

some water so it is not too think

(Mirin optional to me but a must to some)

Sake Optional(didnt use since my son would be having some)

BBQ Sticks or Speared wooden sticks.





Procedure:

Mix all the ingredients, use water if it is too thick to thin it out (set aside some for glazing while grilling) and marinate the cube or the bite size chicken. Let it sit for a while. Then I skewered the chicken with the BBQ sticks or speared wooden sticks when I was ready to grill it. While grilling glaze the chicken with the sauce mixture.



Serve it sizzling hot and you wont go wrong. A taste of Japanese cuisine was prepared on "ourmeza" for one appetizing meal.

Grilled Teriyaki Chicken with Stir-fried Squash



Grilled Teriyaki Chicken with Stir-fried Squash was prepared on our "meza" last nite for dinner.


I've marinated the chicken last Thursday nite so I could grill it for friday night dinner and I've cut the squash julienned for our side vegetable dish but my husband called Friday afternoon and said that he'll be bringing some sub sandwich and not to cook anymore because he wants to drive around before sunset to unwind after a stressful week at work. And so after a quick dinner, we drove up to the hill and there, we could see the city and the view are simply amazing. And up there you'll have this feeling of as if you are so faraway from the worries of world because you are overlooking it. No wonder others pay millions of dollars to live up there. But we also notice that there are huge houses or a mansion per se around the area but it seems so empty and no sign of anyone living out there. Oh well to each its own I guess.


Anyway, so last nite I finally grilled the marinated teriyaki chicken and I've stir-fried the squash. And I've cut some fresh tomatoes too for garnish. Steamed rice was prepared also and some water melon as our fruit dessert. Delicious, healthy, tasty, light and one satisfying meal prepared on our "meza".




Tip: If I have extra time and I know what I would cook the next day, I tend to start preparing for it like cutting the ingredients and etc. so that I wont be in the kitchen for a long time and I'll have plenty of time to spend some quality time with my husband and son after work and school.
